Rogan Josh1I am so impressed with Bozeman’s Winter Farmer’s Market! Last Saturday was my second time there, and it is not big, but there is so much diversity, and fun new producers that I havent seen anywhere else. I can’t wait for the next one!

Dave Scott of Montana Highland Lamb was at the market selling their happy pastured lamb products, and I couldn’t resist buying some ground lamb to try out. I am so happy I did, because this is the best lamb I have ever tasted, and price wise, as locally produced pastured lamb goes…VERY resonable!!

This dish was a hit at our house! My husband tends to think of lamb as so-so, but he said that he could eat this everyday. He made me promise to make this dish again. The baby gobbled her portion up in a matter of minutes. Needless to say, this will be a regular on our dinner table. A big plus, is that this dish took only about 30 minutes from start to on the table ready to eat. That’s what I call fast food!

Lamb Rogan Josh

Serves 4

2 teaspoons coconut oil

1 red onion, chopped

2 cloves of garlic, minced

1 lb ground pastured lamb

1 (15 oz) can of organic diced tomatoes

3 Tbs Rogan Josh Spice Blend

1 tsp sea salt, or to taste

cilantro (for serving)

yogurt or coconut milk (for serving)

Heat the coconut oil in a pan on medium high heat. Add the onions and cook until just translucent. Add garlic and cook 1 minute longer. Add lamb and break up the meat, cook through.

Add tomatoes, rogan josh seasoning and sea salt to taste.

*Serve topped with yogurt or coconut milk and fresh cut cilantro, with cauliflower “rice”

I think Penzey’s has one as well, it should be relatively easy to find.
